Marinated trout fillets with potatoes and saffron dressing

And there it is another idea I've got from my favorite chef. I used different fish. It's extremely easy recipe and very fast to cook. 



Ingredients:

- for the trout fillet:

4 trout fillets
4 garlic cloves
2 tsp paprika
salt
olive oil

- for the potatoes and the dressing:

5 potatoes
few spring onions
2 Tbsp Dijon mustard
1 Tbsp white wine vinegar
2 Tbsp olive oil
pinch saffron

Method:

1. In a pounder mix together the garlic paprika, salt and olive oil good. Cover with the mixture the fish fillets and put them on baking paper with the skin on the top. Leave to rest for 15 - 20 minutes.

2. After the fish fillets are ready bake them in preheated at 220 C oven until ready.

3. Boil the potatoes and after mash them roughly with fork.

4. Meanwhile prepare the dressing. Mix together the mustard, vinegar, olive oil and saffron. Add to the mashed potatoes together with the chopped spring onion and mix.

5. Serve together with the fish. You can use the rest of the dressing for the fish. Enjoy!
