Eggplant Gratin

This is my favorite recipe and I always overeat with it. I just can't stop eating it. This recipe is very easy to do, but it's taking little bit more time. But if you have some fried eggplant in advance it will be ready for less than 40 minutes.




Ingredients:

2 big eggplants
4 tomatoes
150 grams Feta cheese
2 cloves garlic
dill
parsley
3 eggs
200 grams plain yogurt or sour cream

Method:

1. Peel the eggplant and cut it into 5 mm slices. Sprinkle some salt on it and leave it on the side for half an hour. Wash it after and fry it in some oil.

2. Cut the tomatoes into 5 mm slices also and break the Feta cheese to small pieces.

3. Place one layer of eggplant into greased baking dish. Above the eggplant place tomatoes layer and sprinkle with some dill, parsley, crushed garlic and Feta cheese. Repeat the process.

4. Bake in preheated at 180 C oven until the tomatoes get soft. Pour on with eggs and yogurt mixture and bake until the top is golden brown.

5. Serve with some fresh salad. Enjoy!
