Pumpkin Cream Soup

And there it is the soups and pumpkin season. I have one huge pumpkin already two weeks and its presence in my kitchen was really annoying. I was thinking what to do with it. Something sweet or something not so common for our taste. In the end I made decision to cook something we didn't try before. And I cooked some pumpkin cream soup.




Ingredients:

500 - 600 grams pumpkin
2 yellow onions
2 cloves garlic
2 carrots
1 liter water
100 ml milk
30 grams butter
salt
white pepper
dry celery
curry
nutmeg
vegetable oil

Method:


1. In big pot warm some vegetable oil and cook in it the chopped onion, garlic and carrots. Add the water, pumpkin cubes and the spices by taste. Cook until all the vegetables are soft.

2. Puree it with blender. Add the butter and the milk and bring it back on the burner. When bubbles start to show turn off the burner.

3. Serve with bread croutons, cream or feta cheese, or just like that. Enjoy!
