I spent last ten days in Israel and the fast dinner today is inspired by the Israeli culinary. They eat Shakshuka as brunch, lunch or dinner. Really any time. If we translate the name it is similar to the Bulgarian "Mish Mash" equal to the English scramble. It is mixture of tomatoes, onion, peppers and eggs. The origin of this recipe is from the north Africa - Libya, Tunisia and Morocco. Usually Shakshuka is cooked in iron skillet with fresh tomatoes and it is really spicy. And there it is what you will need for 4 servings.
Ingredients:
4 Tbsp olive oil
2 yellow onions chopped
4 big grilled red peppers
15 cloves garlic
5 big tomatoes peeled and chopped
1 tsp paprika
1 tsp hot paprika
1 tsp coriander
1/2 tsp cumin
8 eggs
salt
pepper
Directions:
1. Heat the olive oil in iron skillet or frying pan. Add the chopped onions and peppers and cook until they become soft.
2. Add the chopped tomatoes, the crushed garlic and the spices and cook until the water exhale.
3. Add the eggs one by one. Form hole into the tomato sauce and put the egg. Cover the pan and leave for 5 to 7 minutes on low heat.
4. Serve with fresh salad and bread. Enjoy!
